I’m so excited to share with you guys this vegan rice cooker Chinese sticky rice or nuo mi fan, just in time for Chinese New Year. Traditionally, this is made with meat, but I love this mushroom version. The mushrooms add a delicious umami flavor and almost meaty texture. The savory sticky rice is so delicious and so easy to make in the rice cooker.
Chinese sticky rice is traditionally made in a basket steamer, but this rice cooker method was just as good and easier in my opinion. I figured most of you would have a rice cooker over a basket steamer too. This vegan rice cooker Chinese sticky rice turned out amazing and tasted the same as if you made it in the basket steamer! You could try and make this on the stove with a normal steamer pot and a mesh liner if you have one big enough (I personally don’t have one). Just steam it for 30 minutes, but I have not tested this method.
My family would make this during Chinese New Year and different Chinese holidays. This is actually really easy to make and the flavors are incredible. Chinese sticky rice does not use normal white rice. You have to have Thai glutinous rice or sometimes it’s also called sweet rice, even though the rice is not sweet and it does not contain gluten. You can find it at any Asian grocery store. Please don’t substitute this rice for regular rice.
I love all the savory, umami flavors in this sticky rice and it reminds me of when I lived in Taiwan. This is my kind of comfort food and it makes me think of my mom’s cooking. I could literally eat this at any time of day! My kids love it too, which is a win in my books! We make it often and no one complains. The fried shallots on top add a crunch element to the sticky, soft rice.
